Fermented red rice is a food already recognized by the Chinese pharmacopoeia in the fourteenth century as highly beneficial for human health. The fermentation process takes place by a microorganism known as red yeast (Monascus Purpureus). This fungal agent proliferates by changing the color, flavor and aroma of red rice. The effectiveness of fermented red rice in decreasing blood fats , especially LDL cholesterol , is attributable to the metabolic residues left by the red yeast, called monacolins . In particular, the monacolin k of fermented red rice imitates the chemical structure and action of lovastatin, a synthetic drug with a hypocholesterolemic action. Monacolin K inhibits the key enzyme of cholesterol biosynthesis, HMG-CoA. This contributes significantly to normalizing the endogenous production of cholesterol .

Trigonella seed extracts are attributed hypocholesterolemic and hypotriglyceride-lowering properties .
